Abstract(s)
O aumento de alergias e intolerâncias alimentares e de reações anafiláticas tem vindo a crescer consideravelmente nos últimos anos, sendo amplamente evidenciados ao nível científico como uma preocupação emergente de saúde à escala mundial. Provenientes da relação comportamental do indivíduo face à sua ingestão alimentar, a informação disponibilizada no rótulo alimentar é um dos fatores chave para uma aquisição de alimentos segura, contudo, o aumento da Rotulagem de Precaução neste, gerou no consumidor uma perda de credibilidade, insegurança e stresse nas suas escolhas alimentares. Objetivos: Pretende-se analisar as perspetivas existentes ao nível nacional sobre o aumento de Rotulagem de Precaução e o possível impacto na qualidade de vida do consumidor, considerando a identificação da prevalência destas patologias, as principais causas deste aumento e barreiras encontradas, sendo desenvolvida uma proposta de atuação. Os recursos utilizados incidiram-se na revisão bibliográfica e desenvolvimento de 3 inquéritos para os grupos definidos: População em Geral, Profissionais de Saúde e Indústria Alimentar, cujo tratamento estatístico foi efetuado através do programa estatístico “Real Statistics”. A prevalência de alergias e intolerâncias alimentares incidiu-se em 8% e 20%, existindo uma predominância no sexo feminino 75%. A Rotulagem de Precaução tem influência e impacto nas escolhas alimentares do consumidor. As principais
barreiras para o seu aumento de utilização, deveu-se a falta de diretrizes, sendo os motivos referidos nos sectores alimentares provenientes da necessidade de cumprir com funções de gestão e de comunicação de risco. O comportamento do consumidor é limitado devido a uma insegurança e dúvida existente sobre a real
presença ou não dos alergénios, existindo um nível de risco identificado quando não tida em atenção. À semelhança das perspetivas encontradas a nível mundial, existe uma necessidade aumentada em reformular/atualizar e/ou desenvolver um regulamento e/ou diretrizes, extensíveis e normalizadas a nível mundial que regulem e permitam melhor orientar os sectores alimentares sobre a utilização da
Rotulagem de Precaução, mas também, apostar na educação nas demais frentes e possibilitem a aquisição de conhecimento mais sólido sobre os presentes temas abordados, sendo esta, uma excelente ferramenta preventiva e essencial na diminuição da exposição acidental de alergénios. É apresentada uma proposta de uso de pictogramas específicos para a presença de alergénios e quando em quantidade superior a 0,5 mg /100 g do produto alimentar.
The increase in food allergies and intolerances and anaphylactic reactions has grown considerably in recent years, being widely evidenced at a scientific level as an emerging health concern on a global scale. Coming from the individual's behavioral relationship with their food intake, the information provided on the food label is one of the key factors for a safe purchase of food, however the increase in precautionary labeling in this has generated a loss of credibility, insecurity and stress in consumers. your food choices. The aim of this study is to analyze the existing perspectives at national level on the increase in precautionary labeling and the possible impact on the consumer's quality of life, considering the identification of the prevalence of these pathologies, the main causes of this increase and the barriers encountered, being developed a proposal for action. The resources used focused on the bibliographic review and development of 3 surveys for the following defined groups: general population, health professionals and food industry, whose statistical treatment was carried out through the statistical program “Real Statistics”. The prevalence of food allergies and intolerances was 8% and 20%, with a predominance of 75% in females. Although precautionary labeling is known, it has an influence and impact on consumer food choices. The main barriers to its increased use were due to the lack of guidelines, with the reasons mentioned in the food sectors coming from the need to fulfill risk management and communication functions. Consumer behavior is limited due to insecurity and existing doubt about the real presence or absence of allergens, with a level of risk identified when not considered. Similar to the perspectives found worldwide, there is an increased need to reformulate/update and/or develop a regulation and/or guidelines, extensible and normalized worldwide that regulate and allow better guidance to the food sectors on the use of precautionary labeling, but also to invest in education on other fronts and enable the acquisition of more solid knowledge on the present topics addressed, which is an excellent preventive tool and essential in reducing accidental exposure to allergens. A proposal is presented for the use of specific pictograms when allergens are present and when in quantities exceeding 0.5 mg /100 g of the food product.
