- Conflicting demands of agricultural production and environmental conservation: consumers’ perception of the quality and safety of foodPublication . Cunha, Luís Miguel; Moura, Ana Pinto deConsumer studies in industrialised countries document widespread concern about and distrust on food products and on production methods in the agriculture and in the food industry. These attitudes tend to be reinforced by the absence of face to face contact between buyers and sellers during the process of food selection, leaving the burden of assessing product quality entirely in consumers hands. Both sociological and psychological studies indicate that shopping under these circumstances is a stressful activity, while the lack of trust in agricultural and industrial methods of production and food quality gives rise to feelings of uncertainty and insecurity. In this context, consumers perceive organic products as one way to reduce this anxiety. For this reason, consumer’ behaviour related to organic foods will be examined in some detail in this paper. This work draws a direct confrontation between the European policy and legislation regarding agricultural production and environmental protection related to organic products, and the way consumer’s perceive organic product quality and safety.
- Consumer’s valuation and quality perception of kid’s meat from traditional “Cabrito da Gralheira”: protected geographical indicationPublication . Ribeiro, António Lopes; Moura, Ana Pinto de; Cunha, Luís MiguelDuring the last years, there has been an increased interest in traditional food products (TFP), which are linked to a place or region of origin. Two main drivers may explain this trend: the increasing policy support, particularly within the European Union (EU), and the consumer demand for TFP.
- Control of carnivore overpopulation (Egyptian Mongoose and red fox) : study case in the council of Azambuja (Portugal)Publication . Teodósio, Marisa; Seixas, SóniaThe presence of predators in a habitat is considered a stabilizing force in the population of herbivores, contributing to the balance of the ecosystem. However, the predator’s overpopulation causes a drastic reduction of primary consumers, exceeding the capacity of the ecosystem and endangering the entire food chain. To solve that situation, density control actions are being implemented by man, for balance maintenance purposes or to prevent damages. Often, in the council of Azambuja, there are carried out these actions, by Hunting Associations to control the carnivore population in forest areas, in particular the egyption mongoose (Herpestes ichneumon) and the red fox (Vulpes vulpes), for their allegedly effect on the lagomorphs population decline. The objective of this study was to describe the capture process end-to-end: how the authorization is required, how is it done in the field, how the fiscalization is made and the results on the biodiversity. The methodology used was the record of the process, interview of the people responsible in field for these actions, and consultation with the national authorities involved. It was verified that the national services which controls these actions (National Institute for Nature Conservation and Forestry) and responsible for the evaluation of the licenses requests, issued these ones to a local hunting association, without any previous study of those two species population’s densities or maximum carrying capacity of the environment for them. There’s no effective supervision of the implementation of this action in the field. It was also clear that hunters use these actions, not to guarantee the ecosystem balance, but to eliminate predators in order to increase the lagomorph’s population for the hunting season. So a process that first established the ecosystem’s balance can and may do exactly the opposite.
- Designing and development of food structure with high acceptance based on the consumer perceptionPublication .
- Distance education: the experience with environmental sciencesPublication . Carapeto, CristinaEducational systems should warrant learning needs of the population they serve offering a diversity of educational agents, strategies and answers to the needs of those that seek knowledge (Caeiro et al., 2004). In Portugal the experience of teaching subjects related to Environmental Sciences via open distance learning started in 1995 at Universidade Aberta (a Public University specially dedicated to the open distance learning of graduate and undergraduate courses). This experience began with General Ecology, and in view of the interest showed by students (and in fact by a wider public) the University later offered other subjects such as Environmental Education and Water Pollution. Today we have a number of different subjects within the vast area of Environmental Sciences and are preparing an undergraduate programme in view of the recent Bolonha agreement. The University also offers post-graduate programmes that bring together the environment and the citizen participation. The aim is to heighten the interests of our students in scientific subjects related to the environment as well as providing a practical perspective of what they can do as active citizens. The programmes are supported by necessary tools that enable students to critically analyse and discuss press articles about the environment, protocols that are designed to make industries “greener” as well as government decisions.
- Epidemiological risk perceptions of people living close to open dumps in Nampula, Mozambique: a case study controlPublication . Tocoloa, Alexandre; Martinho, Ana Paula; Fernandes, Ana PaulaWhile the municipal solid waste management systems (MSW) dominated by the informal sector makes positive contributions to the environment, they are also characterised by inadequate service delivery, low waste recovery, operational inefficiencies and inadequate waste disposal. The presence, of municipal solid waste poses a threat to public health and the environment if not managed properly. Tocoloa, Martinho and Vaz-Fernandes focus on the detrimental impact of the MSW in Nampula city, in Mozambique, where populations live near open dumps with open burning. There chapter aims to analyze the perceptions about the effects on health and on the environment of these populations that live close to MSW dumps in the city of Nampula. Employing an epidemiological questionnaire to individuals residing in four different geographical areas, they find that the exposed populations may suffer some illnesses and injuries from living closer to the MSW but showed lack of awareness about it. The fact that waste collection is undifferentiated and the different types of MSW are all placed in these locations, it is expected that in addition to contamination by different vectors (mosquitoes, rats and domestic animals) that can cause different tropical diseases in these populations, other contaminants such as heavy metals and persistent organic compounds cannot be excluded. As uncontrolled waste burning is reported, these populations may also be exposed to dioxins and furans. These results point to the issues related to environmental justice and unequal exposure to the environmentally detrimental impact of a MSW dominated by the informal sector.
- Evaluation of consumers’ acceptance of bread supplemented with insect proteinPublication . Ribeiro, José Carlos; Soares, Alexandra; Moura, Ana Pinto de; Cunha, Luís Miguel
- Food regulations and enforcement in PortugalPublication . Mil-Homens, Ana Sofia; Moura, Ana Pinto de; Cunha, Luís MiguelThis work aims to provide an introduction to food regulation and enforcement systems in Portugal, especially regarding the Portuguese country profile and organization of the competent authorities in the official control of foodstuffs, particularly the Food Safety and Economic Authority. This is a law enforcement body with police powers, responsible for the inspection of economic activity and the official control of foodstuffs, ensures risk assessment, risk management and risk communication. It also provides an overview of the food fraud framework in Europe and Portugal, considering the powers of the Portuguese Authorities and the measures to combat food fraud.
